Luke’s Coffee Cake
What would the Gilmore girls series be without Lorelai & Rory’s coffee obsession? On Rory’s birthday, Luke surprises her with a coffee cake and balloons! Now you too can bake and enjoy it.
Ingredients:
Cake:
- 12 tablespoons (170g) butter, at room temperature, at least 65°F
- 1 teaspoon salt, (1 1/4 teaspoons if you use unsalted butter)
- 1 1/2 cups (298g) granulated sugar
- 1/3 cup (71g) light brown sugar or dark brown sugar, packed
- 2 1/2 teaspoons baking powder
- 2 teaspoons vanilla extract
- 3 large eggs, at room temperature
- 3/4 cup (170g) sour cream or plain yogurt, at room temperature
- 1 1/4 cups (283g) milk, anything from skim to whole, at room temperature
- 3 3/4 cups (450g) King Arthur Unbleached All-Purpose Flour
Filling:
- 1 cup (213g) dark brown sugar or light brown sugar, packed
- 1 1/2 tablespoons cinnamon
- 1 teaspoon unsweetened cocoa, Dutch-process or natural
Topping:
- 1 cup (198g) granulated sugar
- 1/4 teaspoon salt, (if you use unsalted butter)
- 1 cup (120g) King Arthur Unbleached All-Purpose Flour
- 1 tablespoon cinnamon
- 6 tablespoons (85g) butter, melted

One of the other food obsessions of the Gilmore girls is yummy toaster pop tarts. Now although you would quickly go to the store and buy some why not make pop tarts with a twist? These pop tart cookies are the best if you’re in for a delicious treat.
Ingredients:
For the cookies:
- 8 ounces unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup seedless strawberry jam
For the glaze:
- 1 cup powdered sugar
- 2 to 4 tablespoons whole milk
- 1/2 teaspoon vanilla extract
- Pink food coloring
- Sprinkles
Luke’s ButterMilk Pancakes
One of the many things that Luke Danes does best is cook, and that is why Lorelai prefers his Butter Milk pancakes over Ceacers. Here’s the recipe to feel like you have your very own Luke’s Dinner in your kitchen.
Ingredients:
- 2 cups all-purpose flour
- 3 tablespoons sugar
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 ¼ teaspoon kosher salt
- 2 ½ cups buttermilk
- 2 large eggs
- 3 tablespoons unsalted butter, melted
- Any oil to grease the pan
